In pre-Thermo days I made cheats fudge many times (using a melt in the microwave technique)   But let me tell you &#8211; cooking it this way is so much better!<br />
It creates such a perfect texture and taste &#8211; very decadent and delicious. It is very rich and very sugary, so small portions are strongly advised! Don&#8217;t be tempted to cut them in to larger squares than suggested in the recipe, the small serving size is ample.<br />
This freezes really well which is good if you want to make in advance. I would like to be able to tell you that having it stored in frozen form also acts as a deterrent from eating too much, but I have found that you can actually eat it almost straight from the freezer (my husband actually claims it tastes better that way!)</p>
<p>The base recipe below is very similar to quite a few that are floating about on the internet, I adapted my fudge by adding toppings.<br />
I made one batch and roughly divided the tray into thirds and used three different flavours to top it before cutting:<br />
Macadamia Nuts<br />
Chopped Turkish Delight<br />
Chopped Peppermint Crisp</p>
<p>I chose to push the toppings into the top of the fudge, but if you wanted to mix them through you would obviously have to do that before pouring into the tray.<br />
Experiment to suit you own taste and preferred style of presentation. You could use any type of nuts (hazelnuts would be nice), cherries, coconut,  other candy/lolly style toppings, or just leave it plain.<br />

They are a great snack to have in the fridge and a good alternative to cake or biscuits when I am craving something a bit sweet. I have had a few attempts at this recipe, but think I have finally nailed it. The original version of this had nuts included, but I have replaced them with sunflower seeds so that my kids can take them to school (our school has a nut-free policy but seeds are permitted. Check with your own school to clarify their policy on seeds).  The addition of oats means that they are not as sweet as some of my other recipes, and it also bulks the recipe out to a large quantity, making these ones cheaper to make.</p>
<p>You can use cocoa instead of cacao &#8211; but cacao definitely gives a better taste.</p>

Don’t use anything damp to wipe it - make sure bowl stays dry!</li> <li class="instruction" itemprop="recipeInstructions">Place chocolate into the bowl and chop speed 9, 10 seconds. Scrape sides down then melt at 50 degrees, 4 minutes, speed 1.</li> <li class="instruction" itemprop="recipeInstructions">Add all other ingredients including biscuits back into the bowl and combine reverse speed 1, 5 seconds or until just combined.</li> <li class="instruction" itemprop="recipeInstructions">Pour into prepared tin and set in the fridge. Super easy for the kids to help make or do on their own. You can add rum or orange liqueur to the mix if you to create more traditional rum balls &#8211; or just leave them plain for a kid friendly option.<br />
You can also ‘hide’ yummy things inside by forming the mix into a ball around treats such as<br />
• a whole hazelnut<br />
• a Rolo chocolate<br />
• half a jersey caramel<br />
• half a marshmallow<br />
• a piece of glacé ginger or a glacé cherry<br />
Just don’t put anything too hard in there or they could become a tooth breaker!<br />

Be careful not to turn them into powder!</li> <li class="instruction" itemprop="recipeInstructions">Add dried fruit and coconut and chop speed 6, 15 seconds.</li> <li class="instruction" itemprop="recipeInstructions">Add chia and blend speed 6, 5 seconds. The mixture will look crumbly but will hold when pressed together - check with a small piece. If it is not sticking then process for a bit longer or add a couple more dates.</li> <li class="instruction" itemprop="recipeInstructions">Scoop tablespoons of mixture and roll into balls. You can coat in more coconut if you like but I like these ones without.
