• Roast Chicken. We will cook this in the slow cooker. I am a total convert to cooking roast meats in the slow cooker these days! This is my method for Slow Cooker Roast Chicken

5 Day Meal Plan #16

This week I handed the meal planning decisions over and told everyone in the family to select one meal each for the menu. Collectively we have done a pretty good job I think (I chose the minestrone!)

• Pork Stir Fry

• Gnocchi with Bacon, Capsicum & Tomato Pasta sauce

• Chicken Kiev. I don’t have a recipe for this, but will use this one from The Road to Loving my Thermomixer. It looks pretty good!

• Minestrone Soup. I always chop and change this up when I make it, depending on what I have in the fridge. Sometimes I follow the recipe in the Thermomix cookbooks (EDC and Basic Cook Book) but this one is great too.

• Fettucini with tomato pasta sauce and salad. This will be our mid week meal on the night when we get home from sport very late. I made the sauce a week ago and have it in the freezer. I use the recipe on page 63 of the Everyday Cookbook (or the very similar one on page 240 of the Basic Cookbook)

Meal Planning

MealPlanning

I meal plan every week, which helps considerably during our busy weeks juggling work, school, kids after school activities and sports. I find meal planning invaluable for the following reasons:

  • I don’t have to think each day about what we are having for dinner
  • I can prep in advance if I need to
  • I know that the ingredients are all in the house.
  • Being prepared also helps to keep the shopping bill under control – shopping to a list is much easier than mindlessly wandering the supermarket aisles seeking inspiration at the last minute!

I prepare my meal plan each week the day before I shop. Usually the kids have a some input, and I choose meals according to what we have planned for the week and how late I am going to be home from work or sports training (and therefore how much time I am going to have to cook). I don’t stick to any hard and fast rules but generally try to include one vegetarian meal, one chicken, one fish/seafood (sometimes this is tuna or tinned salmon) per week. I also look in the freezer and pantry to see if we have any ingredients that need using up. For recipe inspiration I refer to my own bank of recipes (on the blog!) Google,  The Thermomix Recipe Community and my collection of cookbooks on the shelf.

I don’t overcomplicate things, many family favourites are repeated often, and many weeks I simply re-use a menu plan that we have eaten before.

Five meals are shown in my menus, as one night a week is designated for leftovers (from the freezer or a meal from the week) and one night week is a ‘mystery dinner’ – which is usually on the weekend when I like to try something new or a recipe idea that has inspired me.

We have no food intolerance issues or allergies to work around in our family, and we try and offer our kids a variety of flavours, spices and different ingredients.

I have linked to recipes where I can in my menus (either from my blog or other sources) and links will be updated over time as I add new recipes to the blog after photographing and typing them up.

My slow cooker is going to get a workout this week!

• Lasagne. Made with ragu using this recipe, and bechamel sauce (page 58 in the EDC and 246 in the Basic Cookbook)
• Vegetable Curry. I use the same recipe as I use when making Fish Curry. But substitute the fish with a mixture of vegetables such as kumara, potatoes, squash, cauliflower, broccoli (use whatever vegetables you enjoy). The recipe for the fish curry is here. It is very versatile, I have also cooked this recipe with chicken instead of fish, with great results.
• Mid week roast lamb. I love this recipe from Nikalene who blogs at Skinnymixers

• Slow cooked Moroccan Lamb Casserole

• Stir-fried garlic prawns (in the wok) with Chinese-Style Stir Fried Vegetables – I was skeptical about this vegetable dish but it is really good. You will find it in both the Thermomix Everyday Cookbook (page 92) nd Basic Cook Book (page 206) The vegetables cook while we stir fry the prawns in the wok.

• Home made vegetable pasties. I steam all the leftover vegetables that are lurking in the fridge and pantry (potato, pumpkin, broccoli, corn, peas, spinach, beans – whatever I can find). Once steamed I roughly mash together with some feta cheese, season with salt and pepper, and wrap in pastry and bake (homemade shortcrust is great, but purchased puff works well too). The recipe for shortcrust is on page 119 of the Thermomix Everyday cookbook and page 48 of the Basic Cookbook.
