Have you made nut butter in your Thermomix? It is, perhaps, a bit too yummy – I am always a bit heavy handed on the thickness when spreading this stuff 😉
The batch in this photo is just peanut butter, I use roasted salted peanuts, but you can use unsalted if you prefer. I don’t add any oil, I find just a small handful of macadamia nuts gives enough oil to make it smooth enough for our liking. If you want it smoother you can add a tablespoon or two of macadamia oil.
To make the butter use about 200g of nuts (plus the macadamias or oil) and simply blitz on speed 6-7 for about 30 seconds. Stop half way and scrape the sides down. If you like it really smooth just process for a bit longer. I have also made almond butter and cashew butter. Anything goes! This is not an exact recipe, use the quantity as a rough guide and try your own combinations.
Store in the fridge.
