• Vegetable Frittata
I don’t usually follow a recipe for this, I just use whatever vegetables I have that need using up, with an egg & milk mix whizzed in the Tmx. I use 6 eggs and 1 cup of milk with a little grated cheese added too. Thinly slice the vegetables and layer in a deep baking tin, then pour the egg & milk mix over the top. Bake for 40-50 minutes in a moderate oven.

• Beef Stroganoff
I use a recipe very similar to the link below, but make it in the slow cooker. Add all ingredients except the sour cream and mushrooms and cook for 6-7 hours on low, add the sour cream and mushrooms for the last hour of cooking time. I add extra mushrooms too!
